Dark Emu - Dark Lager is our ongoing collaboration beer with 'Dark Emu' author Bruce Pascoe. Brewed using the addition of roasted indigenous grass seeds of mamadyang ngalluk 'dancing grass' and burru ngalluk 'weeping grass' from the far east harvested by Yuin people & Black Duck Foods. A crisp dark lager with a smooth grainy structure, light toasted malts and unique nutty complexities and earthiness from the grass seed. A distinctly Australian beer.
