Four Pillars Bloody Shiraz Gin and tonic with a lemon wedge, beside the bottle

Eight weeks in the fruit

Every autumn Four Pillars takes cool climate shiraz off the Yarra Valley and tips whole berries into high proof gin. Not juice, not concentrate. The actual fruit, sitting in gin for eight weeks. Then they press it, blend it back with Rare Dry Gin, and bottle it.

No sugar goes in at any stage, which is the thing most people get wrong about it. It looks like a liqueur and drinks like a gin. Pine and citrus on the nose, then pepper and dense raspberry with juniper sitting underneath.

It comes out of Healesville once a year off a single harvest. When the season’s gone, it’s gone.

What counts as a bloody drink

Anything with Bloody Shiraz in it. That is the entire qualification, so the only question left is what you feel like selling.

Bloody Shiraz gin sour, deep purple under a pale foam head

Bloody Shiraz and tonic

Forty five mil, good tonic, a wedge of lemon.

It gets ordered by name, and unlike most of the coloured gin on the shelf there is no sugar in it.

Bloody Paloma

Grapefruit, lime, a pinch of salt, soda.

The shiraz fruit and the grapefruit bitterness do something neither manages alone, and it drinks like a summer drink rather than a novelty.

Bloody Mojito

Mint, lime, sugar, soda.

The same build your bartenders already know, one substitution, a completely different drink in the glass.

Gin sour

Lemon, sugar, egg white.

Deep purple under a pale head, and the colour does more in a sour than it does stretched out in a tall glass.

Bloody Negroni

Equal parts with sweet vermouth and Campari.

The fruit sits underneath the bitterness instead of arguing with it.

Bloody spritz

Over ice, topped with prosecco, orange wheel.

For the venues where every second order in November is a spritz anyway.
