Bottle of Mumm Cordon Rouge with its red sash
Maison Mumm has been in Reims since 1827. In 1876 Georges Hermann Mumm decided the Brut needed marking out from everything else in the cellar, and put a red sash across the bottle, taken from the ribbon of the Légion d’honneur. The house motto went on with it: nec plus ultra, only the best.
A hundred and fifty years later it is the most recognisable piece of dressing on any champagne bottle, and it does a specific job on a back bar. A customer does not need to read the label to know what you have poured them.
Spring racing is not one Tuesday in November. It runs from the Caulfield Cup through the Cox Plate, then Derby Day, the Cup, Oaks Day and Stakes Day, with a carnival attached to it in every state. That is six weeks of people dressed up and ordering something with bubbles in it, and champagne is the one category they order by name rather than by colour.
Then it rolls straight into long lunches, Christmas parties and New Year’s Eve. October to December is the biggest unbroken run of champagne occasions in the Australian calendar.
