El Jimador & Herradura

A horseshoe, a citrus grove, and eleven months

Casa Herradura has been making tequila in Amatitán, Jalisco since 1870. The name arrived later. A distiller named Aurelio López Rosales caught a glint of metal in an agave field, walked over expecting gold and found a horseshoe. He took it as a sign, and in 1928 the company took the word: herradura, horseshoe.

The citrus trees around the distillery are not landscaping. They are kept there to encourage the wild airborne yeast the fermentation runs on, which is why Herradura has never needed to pitch a commercial strain.

Herradura Ultra tequila served in a lifestyle setting

Then they wait longer than anyone makes them. Tequila law requires two months in barrel for a reposado. Herradura’s sits eleven. The añejo waits twenty five. They invented the reposado category doing this, and in 1994 they put out the first extra añejo the world had seen.

El Jimador is the same house, named for the jimador, the worker who harvests agave by hand with a coa. It is the only major tequila named after the labour rather than the owner.

What to do with it

The margarita test

An El Jimador Blanco margarita with nothing but fresh lime is the test every tequila should have to pass.

Better than bourbon

Herradura Reposado goes into an old fashioned better than a lot of bourbon.

The spicy one

And if your customers keep asking for the spicy one, the reposado carries chilli without vanishing underneath it.

Five venues come out of this summer with a year of content.
